Ingredients
- 1 1/2 cups fat-free chicken broth
- 2 scallions, minced
- 1/4 cup parsley, minced
- 1/2 cup white wine
- 1/4 cup evaporated skim milk
- 1 tablespoon flour
- salt and pepper
- 2 tablespoons parmesan cheese
- 1 carrot, julienned
- 1 1/2 cups broccoli, chopped
- 1 1/2 cups cauliflower, chopped
- 1 cup mushrooms, sliced
- 1/2 red bell pepper, sliced
- 1/4 cup peas
- 1/2 pound fettucine

Preparation
Step 1
1. Boil stock until reduced by half (~3 mins).
2. Combine onion-wine. Broil until reduced by half. Strain and save liquid.
3. Mix milk-s&p. Add stock and wine mixture. Boil. Cook 3-5 minutes. Add cheese. Cook veggies in boiling water 3 minutes. Drain.
4. Cook pasta. Toss with veggies and sauce.
