Mandarin Orange & Avocado Salad
This salad looks especially nice on endive leaves.

Ingredients
- 11 ounce can of mandarin oranges, drained,
- 3 Tablespoons of syrup reserved
- 2 Tablespoons olive oil
- 2 teaspoons cider vinegar
- 2 teaspoons honey
- 1/2 teaspoon salt
- 1/4 teaspoon cayenne pepper
- ( or more, to taste )
- 2 avocados, sliced, or chunked
- lettuce leaves of choice, endive,
- or red or green leaved

Step 1
Whisk the mandarin orange syrup with the oil, vinegar, honey, salt, and cayenne pepper. Fold in oranges, and avocados. Arrange lettuce leaves on salad plates, and spoon salad atop the leaves.
