Ingredients

  • 1 cup frozen blueberries
  • 2 Tbsp plus 2 1/4 cups flour, divided
  • 2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1 cup ripe mashed banana
  • 2 eggs
  • 3/4 cup brown sugar
  • 1/3 cup melted butter
  • 1/2 tsp vanilla

Preparation

Step 1

Preheat oven to 375 degrees.
Toss blueberries with 2 Tbsp flour.
Add remaining flour, baking powder, cinnamon, and salt.
Whisk together banana, eggs, brown sugar, butter, and vanilla. Add to dry ingredients, stirring just until moistened. Fold in blueberries. Spoon into lightly greased muffin cups, filling 2/3 full. Bake for 20 minutes or until golden brown.
