  • 1 chicken (about 3 lbs), cut up
  • Salt & pepper
  • 1/3 cup plain bread crumbs
  • 2 tablespoons chopped fresh parsley
  • 1 large garlic clove, minced
  • 2 tablespoons Dijon mustard
  • 1 tablespoon olive oil

Preparation

Step 1

1. Preheat the oven to 450 F

2. Sprinkle the chix all over with s&p
Place the pieces skin side up in a baking pan. Bake for 30 mins.

3. Meanwhile combine bread crumbs, parsley, garlic, oil, and salt and pepper to taste in a small bowl.

4. Brush the chicken with mustard. Sprinkle with the crumb mixture, patting it on so it adheres. Bake for 20-30 mins more, or until juices run clear when chickn cut near the bone. Serve hot or cold.
