Ingredients
- 3 T olive Oil
- 1 medeium onion minced
- 1 medium carrot peeled and shredded fine
- 1/2 c. minced celery
- 1 lb ground beef
- 1 lb ground pork
- 1/2 c. red wine
- 1 T tomato paste
- 3 c.canned Italian plum tomatoes crushed
- 3 bay leaves
- fresh ground pepper
- 4 c. hot water as needed

Step 1
Heat the oil in a dutch oven stir in onions, carrots and celery. Season with salt and cook about 4 minutes. Crumble the ground meat and continue to cook stirring to break up about 10 minutes. Pour in the wine and cook scraping the bottom till the wine is evporated about 3 to 4 minutes. Stir in the tomato paste and cook a few minutes. Pour in the tomatoes and bay leaves, season with salt and pepper. Bring to a boil and then lower the heat so the sauce is ata lively simmer. Cook stirring occasionaly until the sauce is dense but juicy and a rich dark red color. This willtake 2-3 hours. Add water as necessary.
