This is a vegetarian take on osso bucco. Usually paired with risotto, this dish goes well with the asparagus-mushroom orzo.

It was also the first place winning recipe for 2008 Vegetarian Times.

Ingredients

  • 2 Tablespoon olive oil
  • 2 Tablespoon unsalted butter
  • 1 Cup diced celery
  • 1 Cup diced carrots
  • 1 Cup diced onion
  • 3 Whole bay leaves
  • 1 Tablespoon Thyme
  • 1 Tablespoon Oregano
  • 1 Tablespoon Parsley
  • 4 Clove garlic (minced)
  • 1 15 oz can diced tomatoes
  • 1 6 oz can tomato paste
  • 1 13 0z package soy based meat substitute
  • 2 cups low sodium vegetable broth
  • 1 Cup wine (red or white)
  • 1 Teaspoon grated lemon zest

Preparation

Step 1

1. Heat olive oil and butter in a large pot over medium heat

2. Add celery, carrots, onion, bay leaves, thyme, oregano, parsley, and cook 10-15 min until vegetables are tender

3. Add garlic and saute 2-3 minutes

4. Stir in tomatoes and tomato paste and cook 5 min

5. Add meat subst., broth, wine, and lemon zest

6. Season with salt and pepper

Variations: For meat substitute - veg ground beef cut into 1/2 in thick rounds.

Used chardonnay for wine

For veg broth used veg glace
