Ingredients
- 4-5 bulbs garlic
- 1 Tablespoon olive oil
- 1/4 Cup olive oil plus extra for drizzling
- 1 28 oz can chickpeas
- 1/2 Cup lemon juice
- 3 lbs tahini

Preparation
Step 1
1. Preheat oven to 350 and cut tops of garlic bulbs to reveal tips of cloves. Place heads on foil and drizzle with 1 tbs of olive oil. Wrap tightly in foil and bake 20-45 min until soft.
2. Puree chickpeas in food processor until finely chopped. Add lemon juice, 1/4 cup olive oil, tahini and 1/2 cup of water. blend 2-3 min until smooth.
3. Squeeze roasted garlic pulp into chickpea mixture in bowl of food processor.
4. Season with salt and pepper.
