Jim Vlasic's Marinated Bean Salsa

At Emu dinner's at the Vlasic's we've had this dip a few times. We eat so much of it that I'm not very hungry for dinner!

Ingredients

  • 1 Can (15oz) black eyed peas, rinsed and drained
  • 1 can (15 oz) black beans
  • 1 can golden white whole kernel corn drained = 3 ears fresh corn
  • 1 med. red onion, diced - or white onion
  • 1 small red (or green) sweet pepper, diced
  • 1 jalapeno pepper, finely chopped (or Jim used a can of chopped green chilis)
  • 1/3 fresh cilantro or parsley, chopped and/or fresh or dried basil chopped 1/8 cup
  • 3 tomatoes finely chopped, or 1 can chopped tomato
  • Marinade
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1/2 cup olive oil
  • 1/2 cup vinegar
  • 2/3 cup sugar (a little sweet for me, maybe use less)

Step 1


Combine first ingredients in a large bowl. Combine the marinate and pour over bean/veggie mix. Let marinade at least two hours.
