Ingredients

  • Dough:
  • 1 cup shortening (or 1/2 cup margarine and 1/2 cup oil)
  • 2 cups sugar
  • 3 beaten eggs
  • 4-4 1/2 cups flour
  • 4 tsp baking powder
  • 1/2 tsp salt
  • 2 TB milk
  • Filling:
  • jar of prepared mincemeat, prepared as directed (this is enough filling for a double recipe)
  • 1-2 apples, peeled and grated (opt)

Preparation

Step 1

Cream margarine and sugar. Add beaten eggs and milk. Slowly add sifted flour, baking powder and salt. Mix thoroughly and chill. May chill dough in separate disks.

Roll out 1/8" thick. Roll out on lightly floured board. Cut out desired shapes (two per cookie). Place 1 tsp mincemeat mixture on bottom shape. Use identical shape for top of cookie but cut out small circle or star in middle so filling shows. Crimp edges together.

Bake at 425 for 10 minutes.
