Ingredients

  • 1 c port
  • 2 cloves garlic
  • 1/4 c sherry vinegar
  • 1/4 c balsamic vinegar
  • 1 T tomato paste
  • 3/4 t salt
  • 3/4 t freshly ground black pepper
  • 3/4 c EVOO
  • 3/4 c canola oil
  • 1/4 c finely chopped shallots or red onion

Preparation

Step 1

1. In a 1-qt saucepan, bring the port to a boil.
2. Reduce heat slightly & boil until reduced to 2T, about 8 min.
3. Let cool.
3. In a food processor w/ metal blade attached, mince garlic.
2. Add vinegars, reduced port, tomato paste, salt, & pepper.
3. Process to combine.
4. With the motor running, slowly drizzle in oils until dressing is emulsified.
5. Taste, and add additional salt & pepper if necessary.
6. Pour into a bowl & stir in shallots.
7. Stir before using.
