Ingredients
- PASTRY
- 1/2 cup butter, softened
- 1 pkg. (3 oz) cream cheese softened
- 2 tlb. sugar
- 1 1/2 cup flour
- 3/4 cup chopped pecans
- FILLING
- 2 eggs
- 1 cup firmly packed brown sugar
- 1 can (8 oz) crushed pineapple, drained (2/3 cup)
- 2 tlb. butter

Preparation
Step 1
Oven 350.
PASTRY
In small mixer bowl, combine butter, cream cheese, and sugar. Mix at low speed until well blended. Add flour, mix thoroughly. Form into a ball. Cover and chill 30 minutes.
Press chilled dough into bottom and up sides of 12 muffin cups. Sprinkle 1/2 cup of chopped pecans in bottom of pastry lined cups. Spoon filling over pecans. Sprinkle remaining pecans on top.
Bake for 30-35 minutes until golden brown. Cool 15 minutes before removing. Cool completed. Serve with whipped cream, if desired.
FILLING
In small bowl, combine all ingredients. Stir until well blended.
