  • 1 Pkg Cheese-Mexican Queso Fresco (or Queso Panela)
  • 12 Corn tortillas (medium size)
  • 1/2 onion (chopped)
  • 1-12oz can Enchiladas Red sauce

Preparation

Step 1

Heat tortillas in microwave for 2-3 minutes until soft (or on griddle for less chance of breaking and sticking). Warm enchilada sauce in saucepan. Chop onion, crumble (or shred) cheese, and combine both in a bowl. Dip each tortillas in warm enchilada sauce, add 1oz of cheese mizture, and roll.

*** I love to top them with a high mountain of iceberg shredded lettuce, a little salsa, and a little more crumbled queso fresco AND serve them with beans.

Serving Size: 2-3 enchiladas per person. Serves 4-6.
