Ham, Barley and Almond Bake

Ingredients
- 1/2 cup slivered almonds
- 1 tbsp margarine or butter
- 1 cup uncooked barley
- 1 cup chopped carrots
- 1 bunch green onions, chopped
- 2 celery ribs, sliced
- 3 garlic cloves, minced
- 1 lb lean smoked ham, cubed
- 2 tsp dried basil leaves
- 1 tsp dried oregano leaves
- 1/4 tsp ground black pepper
- 1 3/4 cups beef broth

Preparation
Step 1
Preheat oven to 350 degrees. Spray 9x13 inch baking dish with nonstick cooking spray. Spread almonds in a single layer on baking sheet. Bake 5 minutes or until golden brown, stirring frequently.
Melt margarine in large skillet over medium-high heat. Add barley, carrots, onions, celery and garlic; cook and stir 2 minutes or until onions are tender. Remove from heat. Stir in ham, almonds, basil, oregano and pepper. Pour into prepared dish.
Add broth to medium sauce pan; bring to a boil over high heat. Pour over barley mixture. Cover tightly with foil and bake 50 minutes until barley is tender.
