Ingredients

  • 4 T. evoo
  • 2 oinons, diced (I like sweet)
  • 6 cloves garlic, chopped
  • 2 lbs. ground beef
  • 4 eggs
  • 1 1/2 c. bread crumbs
  • 2 c. Parmesan
  • 2 T. Worcestershire sauce
  • 2 T. Balsamic vinegar
  • 4 T. chopped fresh basil leaves
  • 2 t. Chopped flat parsley
  • 2 t. salt
  • 1 t. black papper
  • 2 c. marinara sauce

Step 1

350 oven

Heat 2 T. evoo in a saute pan over medium heat, add the onions and garlic. Saute until soft, remove to plate and cool.

Combine all of the remaining ingredients except for the marinara. Add the onion/garlic mixture.

Pack the meat into a large greased loaf pan, baking sheet or whatever.

Top with marinara sauce, spreading evenly over the top.

Bake for 1 hour, check internal temp, should read 160 degrees F in the middle of the meatloaf.

Remove from oven and rest 5 minutes, slice & serve
