Ingredients
- Crust:
- 1 1/4 cups chocolate cream wafer crumbs or use 1 cup cream wafer crumbs
- 1/4 cup cocoa
- 2 tablespoons sugar
- 1/4 cup melted butter
- Filling:
- 1 pound cream cheese
- 1/2 cup granulated sugar
- two large eggs
- 6 ounces semi sweet chocolate
- 1/2 teaspoon almond flavoring
- 1 teaspoon vanilla
- 1/3 cup amaretto
- 2/3 cup sour cream
- Topping:
- 2 ounces semi sweet chocolate
- 1 teaspoon shortening
- whipped cream [optional]
- toasted sliced almonds

Preparation
Step 1
1. Combine crumbs, sugar, belted butter.
2. Press into bottom of 7 or 8 inch spring form pan and halfway up sides.
3. Chill while making filling.
4. Beat cream cheese well until smooth. Beat in sugar gradually.
5. Beat in Eggs one at a time at low speed. Add cooled chocolate, flavorings, amaretto, sour cream.
6. Beat at low speed until thoroughly blended.
7. Pour into prepared pan.
8. Bake at 300°F for one hour. Turn off heat and leave cake in the oven for an additional hour.
Cool in pan at room temperature, then chill at least 24 hours in refrigerator.
For topping melt chocolate with shortening, spread over top of cheesecake.
Garnish with whipped cream flavored with amaretto if desired and sprinkle with almonds.
