Ingredients
- 1 cup dry white beans (Great Norhern, navy, white kidney)
- 2 to 2 1/2 quarts water
- 1/2 lb. cooked smoked ham,(2 cups)cut in 1/4 inch cubes
- 1/2 cup finely chopped onions
- 1/4 cup finely chopped celery
- 1/2 tsp. finely chopped garlic
- 2 T. olive oil
- 1/4 lb. lean salt pork in one piece
- 1 1/2 tsp. salt
- freshly ground pepper
- 1/2 cup of 1-inch pieces of spaghetti
- freshly grated imported Parmesan cheese

Preparation
Step 1
In a 4 quart saucepan, bring the beans & 2 quarts water to a boil over high heat and boil fo 2 minutes.
Remove from heat and let the beans soak for 1 hour.
Drain beans, saving the water.
Add enough fresh cold water to make 2 1/2 quarts.
Chop ham, onions, celery & garlic (batutto).
Heat olive oil in a large pot, add batutto, & cook for 10 min. until lightly colored, stirring frequently.
Add beans, water & salt pork & season with salt & a few grindings of pepper.
Boil, reduce the heat, & simmer partially covered for 1 to 1 1/2 hours.
Discard salt pork & skim fat off soup.
With a slotted spoon, remove 1/2 the beans from the soup & puree & return to soup.
Simmer over low heat, stirring constantly, for 1 or 2 minutes.
Add spaghetti & simmer 5 minutes until tender.
Sprinkle with grated parmesan & taste for seasoning.
