Ingredients
- 4 anchovy fillets
- 3 garlic cloves
- 2 T. evoo
- 1 t. Worcestershire sauce
- 1 t. Dijon
- 1/2 t. hot pepper sauce1 1/3 c. mayo
- 2 T plus 1/4 c. freshly grated Parm cheese
- 2 T fresh lemon juice
- 3 hearts of Romaine, coarsely torn
- 2 c. croutons (optional)

Preparation
Step 1
Blend anchovy fillets, garlic, evoo, Worcestershire sauce, mustard, and hot pepper sauce until smooth.
Transfer to small bowl
Whisk in Mayo, 2 T. Parm and 2 T. lemon juice. Season with salt and pepper and more lemon juice if desired
Place romaine in large bowl. Add 3/4 c. of dressing, toss to coat. Sprinkle with croutons, remaining 1/4 c. of Parm cheese and pepper.
Serve, passing remaining dressing separately
