Ingredients
- 4 boneless skinless chicken breast halves, in strips
- 1 head broccoli
- 6 ounces lowfat cheddar cheese
- 2 cups skim milk
- 3 tablespoons butter
- 3 tablespoons flour
- 1-2 Medium onions, chopped
- 6 Cloves garlic, crushed
- 1 Teaspoon thyme
- 1 Teaspoon olive oil
- Plain bread crumbs
- parmesan cheese
- Salt and freshly ground black pepper

Preparation
Step 1
1. Cut broccoli into bite size pieces, cook 5 mins.
2. Heat oil in nonstick pan, sauté onion and garlic until limp.
3. In a 2 quart casserole dish, layer chicken, broccoli, cheese and onion.
4. Heat butter in a saucepan. Add flour, stir until mixed into butter and no lumps left. Add milk slowly, stir to incorporate. Add thyme, salt and pepper. Stir and heat through.
5. Pour over chicken and broccoli . Sprinkle top with bread crumbs and cheese.
6. Cover and bake at 350 30 mins. Uncover and bake another 15 mins.
Notes: Good - somewhat intensive for the final product. Left off the bread crumbs/olive oil, just sprinkled with a bit of parmesan at the end.
