Ingredients

  • 3 cups old-fashioned rolled oats
  • 1/2 cup brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon kosher salt
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon cloves
  • 1/2 teaspoon ginger
  • 1/2 cup raisins
  • 3 eggs
  • 1/2 cup pumpkin puree
  • 1/4 cup olive oil
  • 1 1/2 cup milk
  • 1/2 teaspoon vanilla

Preparation

Step 1

Preheat oven to 350 degrees. Stir together all ingredients and then pour into a well-greased 8" square or 8x10 baking dish. Bake for 30-35 minutes (or 40-45 minutes if cold from the fridge in a cold oven), or until knife inserted in center comes out mostly clean. Enjoy!
