Ingredients

  • Dressing:
  • 2-3/4 cups chopped fresh tomatoes (roma or cherry tomatoes)
  • 1 cup chopped cucumber
  • 1 cup chopped orange pepper
  • 3/4 cup chopped red onion
  • 1/3 cup black pitted olives
  • 3-1/2 oz feta cheese (crumbled)
  • 1/2 cup chopped fresh oregano
  • 2 large garlic cloves, crushed in 1 tsp salt to make a paste
  • 1 tbsp olive oil
  • 1 tbsp white wine vinegar
  • 1 tbsp balsamic vinegar
  • 2 tbsp lemon juice

Preparation

Step 1

Chop all vegetables and place in a large bowl. Top with feta cheese and oregano. Prepare dressing and pour over salad just prior to serving.
