Ingredients

  • 1 cup butter
  • 3/4 cup brown sugar
  • 1 egg
  • 2 teaspoons vanilla
  • 3/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ground ginger
  • 1 cup oats
  • 1/2 cup whole wheat flour
  • 2 cups flour

Preparation

Step 1

1. Beat butter and sugar, then beat in egg-ginger until smooth.

2. Beat in oats and flours. Mixture will look dry but will then come together. Divide dough into two pieces, wrap each in plastic wrap, then chill at least 30 minutes.

3. Heat oven to 350. Grease two baking sheets or line with parchment paper.

4. Working with one piece of dough at a time, roll out into a 14" circle. Cut out with cookie cutters, re-rolling and cutting scraps. Place cookies fairly close together on sheets - they won't spread.

5. Bake 12-15 minutes, reversing pans midway through. Remove from oven and cool on rack. Decorate as desired.

Notes: These were so good! And it was nice to have a cutout cookie that was a bit healthier. They had more girth to them but were flaky and light at the same time. Only change was to leave out the ginger and use white whole wheat flour. Halved the recipe and kept dough in the fridge a few days before baking. Sent with Macy to daycare for Valentine's Day.
