Ingredients
- 2 tablespoons parmesan cheese
- 1 1/4 cups 2% low-fat milk
- 3 tablespoons butter
- 3 tablespoons flour
- salt and pepper
- 1 pinch cayenne
- 4 egg yolks
- 1 cup shredded Swiss cheese
- 6 egg whites

Preparation
Step 1
1. Heat oven to 400. Spray souffle dish and sprinkle with parmesan.
2. Heat butter in saucepan. Add flour and stir over low heat for a few minutes. Whisk in milk. As it thickens, add salt and pepper and cayenne. Remove from heat. Beat in yolks one at a time, then stir in cheese. Don't worry about getting it smooth.
3. Beat whites with a pinch of salt until firm peaks form. Fold 1/4 of egg whites into cheese base, then fold in the rest. Place in oven, lower heat to 375. Bake 30 minutes or until golden and just a bit wobbly in the center. Serve immediately.
