Ingredients
- 4 c. diced rhubarb
- 2 separated eggs
- 1 1/3 c. granulated sugar
- 1 tbsp. grated orange rind
- pinch of salt
- tapioca
- 1/4 c. granulated sugar

Preparation
Step 1
Put pastry in a 9" pie plate.
Place diced rhubarb in deep bowl. Beat egg yolks, add sugar, salt,tapioca and orange rind. Mix. Pour this mixture over rhubarb. Pile into pastry shell.
Bake at 450 F for 15 minutes.
Reduce to 350 F and bake about 35 minutes (until the rhubarb is tender).
Remove from oven. Beat Egg whites and add sugar. Spoon around the whites and make sure the egg whites touch the pastry shell.
Brown in oven.
