I'll be honest here, vanilla pudding is not my favorite dessert. I do enjoy the flavor of pudding though, like in cakes, cookies and trifles. Yum! Here is a Vanilla Pudding Cookie; totally crunchy on the outside and soft and chewy on the inside. In other words, the perfect vanilla cookie.

Ingredients

  • 1 1/2 c flour
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 3/4 c butter, softened
  • 1 c sugar
  • 2 tsp vanilla
  • 2 eggs
  • 1 3.5 oz box vanilla pudding

Preparation

Step 1

Preheat the oven to 350*.
Cream the butter and sugar until fluffy.
Beat in the eggs.
Whisk the flour, salt, baking powder and pudding mix in a separate bowl.
Gradually add the dry ingredients into the wet mixture.
Stir in the vanilla.
Using a medium cookie scoop, scoop dough onto nonstick cookie sheets, 2-3 inches apart.
Bake for 9-10 minutes or until the edges turn golden brown.
Cool on the pan for 5 minutes before removing to wire racks.
Store in an airtight container.
