Ingredients
- 1 pound ground beef
- 17 ounces enchilada sauce
- 6 flour tortillas, 10"
- 2 cups shredded cheddar cheese
- 1 can refried beans
- 2 cans green chili peppers, chopped and drained
- chopped scallions

Preparation
Step 1
1. Saute beef until browned, pour off fat. Add 1/2 cup enchilada sauce.
2. Place 1 tortilla on sprayed baking sheet. Top with 1/3 meat and 1/4 cup cheese. Top with another tortilla, then 1/2 of beans, 1/2 cup enchilada sauce, 1 can chilies, and 1/4 cup cheese. Repeat all layers. Top with 1 tortilla, remaining meat, 1/4 cup cheese. Top with remaining cheese.
3. Cover with foil. Bake at 400 for 40 mins, or until hot. Uncover and top with remaining enchilada sauce, cheese, and onions. Bake uncovered 5 mins.
Notes: Yum! What's not to like - cheese, refried beans, enchilada sauce …Easy and delicious. Definite repeater.
