Mini Frittatas - Green Chile aned Pasta (in regular size muffin pan)

Ingredients
- 3 cups just-cooked macaroni noodles (about 1/4 of an 8 oz. pkg), drained
- 3/4 cup half and half
- 12 oz. pepper jack cheese, shredded
- 6 eggs
- 1 (4/5 oz) can chopped green chiles
- 3/4 cup chopped ham steak
- 2 green onions, both green adn white parts, chopped
- 1/4 tea. salt
- 1/4 tea. pepper

Preheat oven to 350 degrees. Coat a 12 cup muffin pan with cooking spray.
Meanwhile, in a medium pot, add macaroni noodles and half and half, warming over medium-high heat. Add cheese, stirring constantly, to incorporate noodles into the melting cheese sauce, about 4-5 minutes. Remove from heat.
Evenly add cheese and noodles into each greased muffin cup, filing about 2/3 of the way full.
In a large bowl, add the eggs, and beat until frothy. Add the chopped ham, green chiles, green onions, salt and pepper, and mix until combined. Pour the egg mixture into the muffin cups over the pasta, just until nearly full.
Place in preheated oven and cook until puffy and eggs are cooked through, about 20-25 minutes. Remove from oven. G3ntly use a butter knife around the inside edges of the muffins to pry the frittatas out of the pan, and serve.
