Ingredients
- 2 cups cooked and cooled Quinoa
- 1 cup chopped parsley
- 1/2 cup chopped scallions
- 2 Tbsp. chopped fresh mint (1 tsp dry)
- 1 garlic clove, minced or pressed
- 1 Tbsp. minced fresh basil (1/2 tsp. dry)
- 1/2 cup fresh lemon juice
- 1/4 cup olive oil
- 1/4 tsp salt
- 1/8 tsp white pepper
