Ingredients

  • 6 cups frozen southern-style diced hash brown potatoes (from 32-oz bag)
  • 1/2 cup blue cheese or ranch dressing
  • 1/2 cup shredded Cheddar cheese (2 oz)
  • 1 can (18 oz) Progresso™ Recipe Starters™ fire roasted tomato cooking sauce
  • 8 frozen cooked buffalo-style chicken strips (from 25-oz bag)
  • Crumbled blue cheese
  • Sliced celery

Preparation

Step 1


Heat oven to 400°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.

In large microwavable bowl, microwave potatoes uncovered on High 3 to 5 minutes or until completely thawed and hot, stirring once or twice. Stir in dressing, Cheddar cheese and cooking sauce until well mixed. Spoon into baking dish. Place chicken strips on top.

Where's the heat? Add some Texas Pete or Frank's Louisiana style hot sauce to make this dish worthy of the name Buffalo.

This is a great, fast easy meal and with the leftovers you can make buffalo chicken wraps! DELICIOUS!
