  • Marinade:
  • 1 cup Jack Daniels or your favourite bourbon
  • 1 cup Soy sauce
  • ¼ cup Brown sugar
  • 1/3 cup fresh ginger shredded
  • 2 tbsp Black peppercorns
  • 1 tbsp Fresh garlic - minced
  • 1 tsp Chili powder
  • ½ tsp Sea salt
  • ¼ cup Toasted sesame oil
  • ½-1/3 cup Olive oil

Combine the whiskey, soy sauce, brown sugar, ginger, pepper, garlic, chili powder and salt in a bowl. Mix with a whisk. While whisking, add the sesame oil and the olive oil until well mixed. Save and set aside about 1 cup for sauce. Marinate the fish in a plastic zip bag in the refrigerator for one hour or longer for more flavor.
Grill the fish on medium heat for approximately 15-20 minutes - depending on the thickness of the fish. It is done when the fish flakes or the internal temperature reaches 140 F.
