Tortilla - Black Bean Casserole

Ingredients
- 2 c onion, chopped
- 1 1/2 c green pepper, chopped
- 1 (14 1/2 oz ) can tomatoes(delMonte fresh cut diced)
- 3/4 c picante sauce
- 2 cloves garlic, minced
- 2 tsp ground cumin or 4 tsp fresh cilantro, chopped
- 2 (15 oz) cans black beans, drained
- 1 can whole kernel corn(delMonte fresh cut), drained
- 12 (6inch) corn tortillas
- 2 c Monterey Jack Cheese, shredded
- 2 tomatoes, fresh, diced
- 2 c lettuce, shredded
- green onion, sliced
- black olives, sliced
- 1/2 c sour cream

Preparation
Step 1
Combine onion,green pepper, undrained tomatoes, corn,picante sauce,garlic, and cumin in a large skillet and simmer for 10 minutes. Stir in beans.Spread 1/3 of bean mixture in a 3 qt baking dish. Top with half of tortillas, overlapping as needed. Top with 1/2 of cheese. Add another 1/3 of the bean mix, then remaining tortillas and remaining bean mix. Cover and bake at 250* for 30-35 minutes. Sprinkle with remaining cheese and cook until melted. Let stand 10 minutes.
Top with tomatoes, lettuce, green onion, olives, and sour cream.
