Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 egg, well beaten
  • 1/4 cup butter, melted and cooled
  • 1/2 cup buttermilk
  • 1 cup blueberries, fresh or frozen (rinsed and well-drained)

Preparation

Step 1

Preheat oven to 400 degrees F. Grease muffin tins.
Set aside 1 tablespoon of flour. Mix together the rest of the dry ingredients.
Combine the egg, butter and buttermilk. Stir into the dry ingredients until just moistened.
Toss the blueberries with the reserved tablespoon of flour. Add to the batter and mix with two or three strokes.
Spoon into the prepared muffin tins and bake 20 to 25 minutes or until golden.
Makes 12 muffins.
