Ingredients
- 7 lbs cucumbers; peeled & seeded
- 2 gallons cold water
- 2 cups lime
- 5 lbs or 9 cups sugar
- 2 qts white distilled vinegar
- 1 Tbsp salt
- 2 Tbsp mixed pickling spice (McCormick)

Preparation
Step 1
Mix lime and water in plastic can or curn; add cucumbers.
Soak for 24 hours.
wash pickles well and soak in ice water for 3 hours or more; up to overnight.
Drain well.
Mix cucumbers and last 4 ingredients and cook in dish pan until pickles are clear and syrup is thick. Do not cook over high heat, you will not have enough syrup.
Pack pickles into sterilized jars, add syrup to cover pickles and seal. Let jars sit for 24 hours before relocating them.
