Ingredients
- 1/3 cup yellow cornmeal
- 1/3 cup flour
- 2 Tablespoons nonfat dry milk
- 2 teaspoons sugar
- 1 teaspoon baking powder
- 1/8 teaspoon salt
- 1 large egg
- 1/3 cup water
- 1 Tablespoon margarine, melted

Preparation
Step 1
1. Mix dry ingredients.
2. Mix egg and water. Stir into dry ingredients with margarine. Mix until dry ingredients are barely moistened. Batter will be lumpy.
3. Cook until top is bubbly and edges begin to dry. Turn and brown other side.
Notes: 6 Pancakes
These were great! Lighter and fluffier than other versions because of the baking powder. Delicious for breakfast with maple syrup - would also be good with black beans and cheese on top.
