  • 3/4 cup carrot, peeled and sliced
  • heaping 1/4 cup broccoli florets
  • 2 tblsp butter
  • 2 tblsp all purpose flour
  • 3/4 cup milk
  • scant 1/2 cup cheddar cheese, grated

Step 1

Steam the carrot for 10 minutes, then add the broccoli florets and cook for 7 more minutes. meanwhile, melt the butter in a small saucepan and stir in the flour to make a thick paste. Gradually add the milk, bring to a boil, and stir continuously until the sauce thickens. Simmer for 1 minutes. Remove from the heat and stir in the grated cheese. Add the cooked vegetables to the cheese sauce and blend to a puree. Serve with tiny cooked pasta shapes.
