Ingredients

  • Sauce:
  • 1/2 cup hot water
  • 1 1/2 tbsp tamarind paste
  • 5 tbsp fish sauce
  • 1/2 tsp cayenne or 2-4 tsp chili sauce
  • 5-6 tbsp brown sugar
  • 1/2 lb rice noodles
  • Shrimp
  • Tofu
  • 2 eggs
  • Ground peanuts
  • 2 green onions sliced in little pieces
  • One garlic clove
  • Beansprouts

Preparation

Step 1

Soak noodles in very hot tap water for 25 mins then drain
Mix sauce ingredients in small saucepan and heat on low
Heat wok over high heat until very hot
Add about 3-4 tbsp of peanut oil. Add tofu and cook until lightly browned, then add garlic
Add the noodles and ladle in some of sauce. Stir rigorously, keep everything moving in the wok, and cook the noodle until soft.
When the noodle is ready (taste it to be sure), push it to one side of the wok and crack eggs in the middle. Let sit for 10-15 seconds and toss everything together
Add the shrimp, peanuts and beansprouts. Keep things moving. Add more sauce if it looks a little pale
When the shrimp is done, add a handful of green onions. Take off heat
Garnish with green onions, peanuts and cilantro
