Ingredients

  • 1 1/2 cups (225g) AP flour
  • 1 tsp baking powder
  • 1/8 tsp salt
  • 3/4 cup (180g) butter, melted
  • 1/4 cup (50g) sugar
  • 1 tsp vanilla extract
  • Topping
  • 1/2 cup (125g) butter
  • 1/2 cup (100g) sugar
  • 2 tbsp light corn or golden syrup
  • 1 can (14oz/400g) sweetened condensed milk
  • Frosting
  • 8 oz (250g) semi sweet (dark) chocolate, coarsely chopped
  • (I use milk and dark mixed)

Step 1

Base:
Preheat oven to 325F

Line an 8" (20cm) square baking pan with aluminium foil. Mix the flour, baking powder, and salt in a medium bowl. Beat the buttr and sugar in a large bowl with an electric mixer at high speed until pale and creamy. With mixer on low speed, beat in the vanilla and mixed dry ingredients (I fold)

Spread the mixture evenly in the prepared pan. Bake until golden brown, around 10-15 mins.

Topping:
Melt the butter with the sugar, corn syrup, and condensed milk in a medium saucepan over low heat, stirring continuously. Bring to a boil and simmer for 5 minutes. Remove from the heat and let cool slightly. Spread the topping evenly over the cookie base.

Frosting:
Melt the chocolate and pour it over the topping and let stand for 30 minutes until set. Cut into squares.
