Oatmeal Raisin Cookies

Ingredients
- 4 tblsp (1/2 stick) margarine, softened
- 2 tblsp heat-stable sugar substitute equal to
- 3 tblsp sugar
- 1/4 cup egg substitute or 2 egg whites, lightly beaten
- 3/4 cup unsweetened applesauce
- 1/4 cup frozen unsweetened apple juice concentrate
- (thawed)
- 1 tsp vanilla
- 1 cup all purpose flour
- 1 tsp baking soda
- 1/2 tsp ground cinnamon
- 1/4 tsp salt (optional)
- 1 1/2 cup Quaker Oats (quick or old fashioned,
- uncooked)
- 1/3 cup raisins, chopped

Preparation
Step 1
Preheat oven to 350 degrees.
1. Lightly spray cookie sheet with cooking spray
2. In large bowl, beat margarine & sweetener or
sugar until creamy.
3. Add egg subtitute; beat well.
4. Add applesauce, apple juice concentrate &
vanilla and beat well
5. Add combined flour, baking soda, cinnamon,
& salt; mix well.
6. Add oats and raisins; mix well
7. Drop dough by rounded teaspoonfuls onto
cookie sheet
8. Bake 15 - 17 minutes or until firm to the touch
& light golden brown
9. Cool 1 minute on cookie sheets; remove to wire
rack.
10. Cool completely.
11. Store tightly covered
Makes about 3 dozen
