Ingredients

  • 12-18 corn tortillas
  • 3 c. cubed, cooked chicken breast
  • 1 can kidney beans, rinsed and drained
  • 1 1/2 jars of salsa
  • 1 1/2 c. sour cream
  • 1 1/2 lg. green peppers chopped
  • 1 1/2 cans sliced ripe olives, drained
  • 1 1/2 c. shredded Monterey Jack cheese
  • 1 1/2 c. shredded cheddar cheese

Preparation

Step 1

In a greased 9x13 baking dish arrange six tortillas. Top each with some chicken, kidney beans, salsa, sour cream, green pepper, olives and cheeses. Repeat layers twice.
Cover and bake at 350F for 25 min. Uncover and bake 10-15 min. longer or until the cheese is melted. Let stand 10 min. before serving.
