Ingredients
- 1 1/2 c. minute rice, uncooked
- 1 1/2 c. warm water
- 4 small chicken breasts
- 1 1/2 tsp. chili powder (or more)
- 1/4 c. Ranch dressing
- 1/2 c. grated cheese
- 1 med. red pepper, chopped

Step 1
Preheat oven to 400F. Combine the rice and water and let stand 5 min.
Spoon rice mixture evenly onto centre of each of 4 lg. sheets of heavy-duty aluminum foil. Top each with 1 chicken breast; sprinkle with chili powder. Drizzle evenly with dressing. Top with cheese and veggies. Make packets. Place on a baking sheet.
Bake 40-50 min.or until chicken is cooked thru.
