Ingredients

  • 1 lb. ground beef
  • 1 cup frozen corn kernels, thawed
  • 1 can (8 oz.) tomato sauce
  • 1 can (4 oz.) green chilis
  • 1/2 cup water
  • 1 packet taco seasoning
  • 1 teaspoon ground cumin
  • Crust
  • 1/2 cup biscuit baking mix
  • 1 cup whole milk
  • 2 large eggs
  • 1 1/2 cups shredded Mexican cheese
  • Sour cream, chopped tomatoes or cilantro (optional)

Preparation

Step 1

1. Preheat oven to 400. Heat large nonstick ovenproof skillet over medium high heat until hot. Add beef; cook and stir until browned. Drain and discard excess fat; return beef to skillet. Stir in corn, tomato sauce, chiles, water, seasoning mix and cumin; remove from heat. smooth surface with spoon.

2. Combine biscuit mix, milk and eggs in a small bowl. Stir until well blended; pour evenly over meat mixture. Bake 40 minutes or until crust is golden and knife inserted in center comes out clean.

3. Sprinkle evenly with cheese. Let stand 5 minutes before serving. Garnish as desired.
