Ingredients
- Dressing:
- 1 1/4 cup mayonnaise
- 2 Tablespoons pickle juice
- 1 Tablespoon mustard
- Salad:
- 1 1/2 Pounds potatoes (peeled, cooked, chopped)
- 1 cup shell macaroni, dry (cooked, drained)
- 1/2 cup shredded carrots
- 3 green onions (finely chopped)
- 3 Large hard-boiled eggs (peeled and chopped)
- 1 cup frozen peas (defrosted)
- sea salt & fresh ground pepper (to taste)
- 3 sweet pickles (coarsely chopped, optional)

Preparation
Step 1
Dressing:
In a small bowl, mix together dressing ingredients, set aside.
Salad:
In a large bowl, place chopped potatoes. Add the cooked macaroni. Add the diced eggs. Add the shredded carrots. Add the peas. Add the green onions. Add the dressing and stir to combine.
Cover and refrigerate until ready to use.
