  • 3 egg yolks
  • 1-2 T fresh lemon juice
  • Pinch of salt
  • 2 sticks unsalted butter, melted
  • White pepper to taste

Preparation

Step 1

Whisk yolks with 1 T. lemon juice in a small heavy pan. Add salt, whisk until thick and creamy.
Place pan over very low heat, whisk until it begins to thicken.
Remove from heat, whisk in melted butter in dribbles, leaving the milky sediment in the bottom of the pan.
Whisk in pepperand add additional 1 T of lemon juice to taste .
The sauce will keep in a covered in a warm, not hot, place for at least 30 minutes
