Ingredients

  • 2 tbsp canola oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 3 cups cooked white rice
  • 2 cups black beans, drained and rinsed
  • 1 tsp cumin
  • 1 tsp coriander
  • 1/2 tsp ground ginger
  • 2 tbsp Worcestershire sauce (2 to 3)
  • Salt and pepper
  • Cilantro
  • Sliced scallion

Preparation

Step 1

1. Saute onion in oil until it just begins to soften. Add garlic, sauté 5 mins, or until onion is golden.

2. Add spices and Worcestershire, stir into onions.

3. Add beans, then rice. Heat through, season to taste. Garnish.

Notes: This was really awesome - deceptively delicious for such an easy meal - done in 15 minutes. Made less rice, fresh ginger, 2 tbsp Worcestershire, upped the cumin a bit. Topped with cilantro, scallion, and diced tomato.
