Ingredients
- 1 1/2 lbs ground beef, 85/15
- 1 Tbsp Cumin
- 1 Onion, chopped
- 1 Large Green Bell Pepper, chopped
- 8 oz Crimini Mushrooms, sliced
- 2 cans Beef Broth
- 3/4 cup Pearl Barley
- 1 canDiced Tomatoes
- 1 tsp Ground Coriander
- 1 Large Lemon, zested
- Salt & Pepper, to taste

Preparation
Step 1
Preheat oven to 350 degrees. In a skillet over medium heat, brown meat and cumin. Remove, drain and reserve. In same skillet, saute onion, mushrooms and bell pepper until just beginning to soften. Spread beef and cooked vegetables in a 9 X 13 pan and sprinkle barley overall. Top with layers of tomatoes, diced peppers and mushrooms then sprinkle with coriander and lemon zest. Add broth, cover, and bake about 1 1/2 hours, until barley is soft and liquid is absorbed.
