Ingredients
- 2 cups G.F. flour
- 1 tsp baking soda
- 3/4 cup sugar
- 2 tsp guar or xantham gum
- 1/2 tsp salt
- 1 cup sour milk or buttermilk
- 1/4 cup vegetable oil
- 1 large egg
- 1 tbsp cinnamon
- 1/2 cup sugar

Preparation
Step 1
Combine first 5 ingredients in a bowl
Beat together the sour milk, vegetable oil and egg
Add to dry ingredients
For the topping, combine the cinnamon and sugar
Layer 1/2 of the batter in prepared loaf tin, then 1/2 topping, then balance of batter, then balance of topping
Swirl knife through batter
Bake at 350*F for 35 minutes
Cool, wrap in plastic wrap
Keeps well in refrigerator
Good with coffee.
