  • 1/2 cup sugar
  • 3 tablespoons water
  • 8 ounces cream cheese, softened
  • 3 eggs
  • 1 teaspoon vanilla
  • 14 ounces sweetened condensed milk
  • 12 ounces evaporated milk

Preparation

Step 1

1. Caramelize the sugar and water. When caramelized, pour into a 9-inch round pan.

2. Preheat oven to 350.

3. Put cream cheese, eggs, and vanilla in blender. Blend until smooth. Add condensed milk and blend again. Add evaporated milk and blend again.

4. Pour over caramelized sugar in pan and set pan in another pan with has about one inch of water in it. Bake for one hour. Cool and invert on a plate. Chill.

Notes: Delicious and easy - perfect way to have "cheesecake" that's lighter. Couldn't get the sugar to caramelized, so just cooked up the flan in a sprayed 9" cake pan. Served it with pureed sweetened berries and fresh strawberries. Delicious! Used light cream cheese and condensed milk
