Ham and Cheddar Quiche

I had a ton of leftover Easter ham and since I'm not a big sandwich fan, I wanted to find another way to use it up. Ironically enough, I don't really like eggs either - but I do love quiche. I guess there is only half an egg in each slice, so I taste cheese and ham instead of egg.

Ingredients

  • 1 deep-dish 9" pie shell (already baked)
  • 3 eggs
  • 1 cup milk
  • 1/2 cup half and half
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 3/4 cup diced cooked ham
  • 1 minced shallot
  • 1 1/2 cups shredded extra sharp cheddar
  • 1 Tablespoons flour

Preparation

Step 1

Whisk the eggs, milk, half & half, salt, and pepper together. Stir in the ham and minced shallots. In a separate bowl, toss the flour and shredded cheese together (the flour keeps the cheese from clumping in the quiche) Fold the cheese into the rest of the ingredients and pour into the pie shell.

Bake at 325 for 45-60 minutes (or until set in the center)

I served the quiche with some fresh pineapple I cut up this morning.
