Crockpot Corned Beef and Cabbage

Ingredients
- 4 1/2 lbs corned beef brisket
- 2 onions, quartered
- 1 head cabbage, in small wedges
- 1/2 tsp pepper
- 3 tbsp vinegar
- 3 tbsp sugar
- 2 cups water

Preparation
Step 1
Combine ingredients in crockpot with cabbage on top. Cut meat to fit, if necessary. Cover and cook on low 10-12 hours; high 6-7 hours or auto 6-8 hours.
Notes: Extremely tender and flavorful. Easy, easy in the crockpot - stuck to the recipe and just added some peppercorns. We also added carrots halfway through so they wouldn't get too mushy and boiled up some potatoes at the end and then added them in for a few minutes to soak up the broth. Next time might add the cabbage later.
