Ingredients

  • 3 second Cooking Spray
  • 1 onion, chopped
  • 1 celery stalk(s), minced
  • 1 carrot(s)
  • 1/2 red bell pepper, chopped
  • 1 tsp fresh thyme
  • 1/2 tsp sea salt
  • 1 dash ground black pepper, to taste
  • 3 garlic clove, minced
  • 3 tbsp Organic Worcestershire Sauce
  • 1 tbsp Organic Tomato Paste
  • 1 lb Ground Turkey 93% Lean
  • 2 egg white(s)
  • 1 cup Shredded Classic Extra Sharp Cheddar
  • 2/3 cup Panko Breadcrumbs - Whole Wheat
  • 3/4 cup Organic Spinach, chopped
  • 4 tbsp 100% Natural Tomato Ketchup
  • 2 tbsp Parsley, Raw

Preparation

Step 1

1. Preheat oven to 325 degrees. Heat a large non-stick pan over medium-high heat. Spray pan generously with fat free cooking spray.
2. Once pan is hot, add onion, celery, carrot, red bell pepper and fresh thyme. Sauté for approximately 8 minutes or until soft. Add salt and plenty of fresh ground black. Lower heat to medium and add garlic. Stir in Worcestershire sauce and tomato paste and cook for another 2 minutes. Scrape the veggie mixture into a large bowl and let cool until room temperature. In the meantime, spray a large sheet pan with fat free cooking spray.
3.Once veggie mixture is cooled, add turkey, egg whites, cheddar cheese, panko (or oats if you'd prefer) and spinach (or kale if you'd prefer) into the bowl and mix gently with hands until just combined (don’t over mix). Add more panko or oats if mixture is too wet to shape (it should be fairly wet).
4. Shape into 10 oval patties and arrange on sheet pan. Spread about 1 teaspoon of ketchup on each meatloaf. Bake for about 28 to 30 minutes or so until cooked throughout. Remove from heat and garnish with fresh parsley. Enjoy!
