Ingredients

  • 1/2 cup corn polenta (finely ground corn meal)
  • ___? cup Spanish onion
  • 1 cup water
  • 1 cup heavy cream
  • ___? maple syrup
  • 1 cup parmesan cheese (shredded)
  • ___? cup fresh corn kernals (removed from cob)
  • 1 T olive oil
  • 1 t fresh chives ( chopped)
  • Salt and black pepper to taste

Preparation

Step 1

In a medium saucepan, lightly cook onions and fresh corn until onions are translucent. Add water, cream and maple syrup. Bring to a boil. Stir in polenta and cook on low heat for 5 minutes. cover pan with foil and bake in oven for 45 minutes for 350 degrees. Remove from oven and stir in chives Parmesan, and season with salt and pepper.
